Tofu Masala - Vegetarian - Indian 8 oz. tofu 1 onion, finely chopped 2 cloves of garlic 1/2 piece root ginger, peeled 3 tomatoes, chopped 1/3 cup cashew nuts 1/4 cup almonds 1 tsp. ocoriander seeds 3 black peppercorns, crushed 1 cardamom pod 3 cloves 2 piece cinnamon stick 1/2 tsp red chilli powder Salt Vegetable oil With Pestle & Mortar grind the dry spices (except the cinnamon stick). Add the nuts and grind them too, until the mixture begins to form a dry paste. Add the garlic and chopped ginger and continue to grind. Cut the tofu into 1/2 cubes. In skillet heat oil and fry the tofu until it bits of it begin to brown; remove from pan and set aside. Add Onion to skillet as well as the cinnamon stick; fry until onions are transparent. Add the nuts/spice mixture blend well. Continue to cook for a few minutes until you can smell the garlic cooking, then add chopped tomatoes, some water, salt and the fried tofu. Simmer for twenty minutes. Serve with boiled rice or chapattis.
